Cured tuna Mojma is the star of the salt fish world. It is made from tuna loin, which is salted and dried in the traditional manner. There are different quality categories, with “Extra” the most highly valued, as it is cut from the centre of the loin and stands out for its semi-circular marbling which sets it apart from the other categories. Mojama is famed from north to south, and can be eaten on its own, with fried, salted almonds, with a generous splash of extra virgin olive oil, combined with Xixona nougat to heighten the flavour contrast, or in a thousand other ways.
