The Bonito is a key species in the world of salting and canning. These fish can raise their body temperature above the water temperature through their muscle activity. The most characteristic format is to cure the whole fish, head and all, butterflied open and placed on wooden slats to undergo a dry pile salting process, after which it is washed and then finished off with light drying. At Ricardo Fuentes Salazones we ensure the very best quality with our specialist salting process.
Salted bonito is a hallmark of Eastern Spanish cuisine, and an outstanding feature of Mediterranean coastal hors d’oeuvres. Its distinctive flavour of the sea and meatiness are sure to win you over. Normally served with fresh tomato.
We offer a 100% natural, artisanal product. Caught in local waters and lovingly processed at our facilities.
